Jammy Mug Cake

Super quick vanilla mug cake with a jammy, fruity twist.

This cake is ready in 90 seconds!

Okay you still have to spend an extra minute or so, mixing all the ingredients together.

But this sugarfree mug cake is an instant treat, ready when you are.

You can make your own homemade sugar free jam by boiling down chopped berries with erythritol or you can use a sugarfree jam like this one.

Both work fine and are equally fine.

You need:

1tbsp butter

1tbsp milk (Unsweetened almond or coconut milk or double cream)

1egg

3tbsp almond flour

½ TSP coconut flour

2-3 tbsp sweetener

1/4tso baking powder

1tso vanilla or a few drops vanilla Stevia

1-2 tbsp sugar free jam

Add the butter into your mug, then microwave till the butter melts.

Add the milk or cream

Crack the egg and add to the mug

Add 2-3 tbsp sweetener

Measure 3 tbsp of almond flour and 1/2tsp coconut flour and add to mixture

Add baking powder and vanilla. 

Mix everything really well with a fork.

Then add a dollop of sugar free jam in the middle.

Microwave for 90 seconds.

Pause the microwave for a few seconds in between, if the mug cake rises too high.

Serve hot or cold with extra jam and cream.
